Ingredients
- ½ cup mayonnaise
- ½ cup Thousand Island dressing
- 16 ounces sauerkraut, rinsed and squeezed dry
- 8 ounces shredded corned beef
- 16 ounces shredded Swiss cheese
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix mayonnaise and dressing together in a small bowl; set aside.
- Spread sauerkraut into a 9×13-inch baking dish. Layer corned beef, Swiss cheese, and mayonnaise mixture on top of sauerkraut.
- Bake in the preheated oven for 20 to 25 minutes. Serve hot.

I accidently made this with Roast Beef and it did not have the zingggg. I added the Corned Beef and put it in the fridge and cut a serving the next day, zapped it in the microwave …. omygoodness !! soooo good !!
My wife and I are big fans of Ruben sandwiches . I made it for a Sunday football party and all my guests loved it . I was invited to a Super Bowl party and the hostess had asked me to make a double batch . The first two bowls of dip at the party to be empty !
Made this for a halloween get together and it was a hit. lightly toasted hunks of a loaf of rye bread to use for scooping, dipping. delicious!!!
I wasn’t a fan. All I wound up tasting was Thousand Island dressing. I’ll look into other Reuben Dip recipes if I decide to make it again.

Great! Just like a Reuben sandwich if you eat it with pieces of rye toast. Good with crackers too, but not quite Reuben without that rye. So for use with crackers or tostitos scoops, I recommend adding 1 tablespoon of caraway seeds, 1 tsp of dill, and a tsp of orange zest to Mayo/dressing mixture, which, together, provide a very rye-like flavor right in the dip.
It was a bit dry even when I added more mayo, next time I make it I think I am going to add some cream cheese

I tried this recipe for a New Years Party but first I made a small batch for myself. In the small batch I used Budding sliced meat and combined the ingredients as other suggested. I used the exact proportions as the recipe suggests and it was wonderful. I did not have a problem eating it even when it cooled. Most of the cheese was mixed with the other ingredients then sprinkled some lightly on the top, no issues dipping that way. For the party I’m using a more expensive deli corned beef. It looks delicious.
Made this over the weekend, and it was a big hit. Did not layer ingredients, just stirred it all together, and baked. Served with toasted rye bread, cut into bite-sized pieces.
I just added halve bottle of thousand island dressing instead of separate ingredients. I would not press sauerkraut as dry.
This was delish!! I made this for a get together and now Everyone keeps asking me to make this. I also took the advice of others and used cream cheese. I double mine every time I make it so I will typically half the mayo & use a full block of cream cheese. We like these with rye bread & pumpernickel toasted bread squares. I buy a loaf of each, cut each slice into about 4 squares or whatever u feel is adequate for the size you want. I then place on a baking pan & toast in the oven about 4 min. Per side
Made this for a St. Patrick’s Day party and it was the highlight of the spread. I will definitely make this again for another party!
