I have had many picos, but this is by far the nicest. The secret to this recipe’s incredible flavor is using fresh cilantro and sweetened lime juice. The lime juice is in the same aisle as the margarita mixes and other items. This yields enough to feed a large group.

Ingredients

  1. 3 pounds diced roma tomatoes
  2. 1 ½ pounds diced red onion
  3. 3 jalapeno pepper, seeded and minced
  4. 1 cup minced fresh cilantro
  5. ½ cup sweetened lime juice
  6. 1 tablespoon taco seasoning mix

Instructions

  1. Place the tomatoes, onion, jalapeno peppers, cilantro, and lime juice into a large mixing bowl. Sprinkle with taco seasoning and stir gently until evenly mixed. Cover and refrigerate at least 1 hour to allow the flavors to blend before serving.

I cut this recipe way back…and eyeballed the ingrediens a bit because of that. This is very simple, but then again that’s the essence of pico de gallo. I used a homemade taco seasoning blend vs. a mix and opted for fresh lime juice, adding a little sugar for sweetness.

I cut this in recipe in half. Because I did NOT have fresh jalapeno, I substituted a couple tablespoons of mild diced green chilies. I also did not have sweetened lime juice, I added in a tablespoon of brown sugar for a bit of sweetness. Quite good.

Great pico de gallo. I only used two roma tomatoes, a small white onion, a handful of fresh chopped cilatnro, some squirts of the bottled lime juice, and a sprinkle of the taco seasoning. Perfecto…. I used this to top some breakfast pizzas I made. YUM YUM.
