Making this dip and bringing it to potluck dinners with some vegetables, like carrots and broccoli, is a terrific idea.

Ingredients

  1. 2 cups cottage cheese
  2. 1 cup plain yogurt
  3. ½ teaspoon lemon juice
  4. garlic powder to taste
  5. 1 cup shredded Cheddar cheese
  6. dried dill weed to taste

Instructions

  1. In a medium bowl, blend cottage cheese, plain yogurt, lemon juice and garlic powder. Cover and place in the refrigerator approximately 1 hour, until chilled.
  2. Stir Cheddar cheese into the cottage cheese mixture. Sprinkle with a layer of dried dill weed. Chill in the refrigerator until serving.

5.8.20 I consider this a guilt-free dip, and most importantly, a delicious one! No mayo, instead, cottage cheese (I used low-fat), plain yogurt, and it’s so easy to make. I wanted the cheese really incorporated into the dip, so I used my microplane zester rather than using shredded cheddar. The submitted says “blend,” but doesn’t say how or what to use to blend. I scaled the recipe down today and used my mini blender/chopper that came with my Cuisinart immersion blender, and it produced a really creamy texture. I added some salt and freshly-ground black pepper, and gave it an extra little squeeze of lemon to amp up the flavor just a bit. This recipe was a surprise, a very good surprise, and I think I’ll be making this one often.

I made it just as the recipe said, but I added some onion powder to it. That gave it that extra flavor it was missing!

I used Trim Cottage Cheese and a good amount of dill weed. I wanted a more smooth consistancy for my dip–I ran the cottage cheese through the blender before folding in the other ingredients. You know, I really liked this dip and it surprized me that the family did, too. They couldn’t even tell it was made with cottage cheese!

This recipe was so simple and delicious. It was a great alternative to regular dill dips or ranch dips. I put it in the blender to make it extra smooth. I served this with fresh veggies, and the gang loved it!

This is really good, but I think you need to serve it with really flavorful crackers, or it could be a little bland. Good though, I love dill. Don’t put in too much garlic powder by mistake, like me! MMmmmmm
