Spinach, tomatoes, goat cheese, and olive oil are combined with bow tie pasta. The finest pasta dish ever is this one! One day I served it rather than a hearty pasta dish. The goat cheese is the star of this dish!

Ingredients

  1. 8 ounces cream cheese, softened
  2. 1 (2.5 ounce) package deli-sliced corned beef (such as Buddig ®), diced
  3. 3 green onions, finely chopped
  4. 1 tablespoon mayonnaise
  5. 2 teaspoons Worcestershire sauce
  6. ½ teaspoon prepared horseradish
  7. ½ cup chopped pecans

Instructions

  1. Combine cream cheese, corned beef, green onions, mayonnaise, Worcestershire sauce, and horseradish in a bowl until thoroughly mixed.
  2. Shape cream cheese mixture into a ball.
  3. Place pecans into a shallow bowl. Roll and coat ball in chopped pecans. Refrigerate until ready to serve.

We enjoyed this! I upped the nuts to a cup and made 8 personal-size cheese balls. They freeze well to put in lunches later with crackers. Next time I would up the horseradish a smidge and follow Pam’s suggestion with the mustard.

One of my favorite cheese balls…instead of the mayo, I use plain old bottled mustard. I think it goes better with the corned beef and horseradish. I leave the nuts off and roll in additional minced corned beef. The guys like this one lol.

Made this the other night for a snack and we enjoyed it okay. I wanted more of a dip so I used spreadable cream cheese and left out the walnuts. The flavor is good but this seems to need something else I just can’t seem to put my finger on what I would want it to be =). Solid recipe that you could throw just about anything into!
