Corn Salsa with Black Beans

This recipe has been served as a hot meal at potlucks and outings for at least 30 years, however its origin is unknown. Baked in tomato sauce with rice and ground beef is shredded cheese. With hamburger, it’s a terrific way to serve a crowd, and the ingredients are simple to keep on hand. By heating leftovers in a tortilla in the microwave, roll-ups may be produced quickly.

Ingredients

  1. 2 (10 ounce) packages frozen corn, thawed
  2. 2 (15 ounce) cans black beans, rinsed and drained
  3. 1 green bell pepper, diced
  4. 1 red bell pepper, diced
  5. ½ jalapeno pepper, finely chopped
  6. ½ cup finely chopped red onion
  7. ½ cup chopped fresh cilantro
  8. 2 cloves garlic, minced
  9. ½ cup mayonnaise
  10. ¼ cup sour cream
  11. 2 tablespoons red wine vinegar
  12. 2 tablespoons ground cumin, or to taste
  13. 1 tablespoon chili powder
  14. ½ teaspoon cayenne pepper
  15. ½ teaspoon salt, or to taste
  16. 1 lime, juiced
  17. ground black pepper to taste

Instructions

  1. Combine corn, black beans, bell peppers, jalapeno, red onion, cilantro, and garlic in a large bowl.
  2. Whisk mayonnaise, sour cream, vinegar, cumin, chili powder, cayenne, salt, lime juice, and black pepper together in a small bowl. Toss dressing with corn and bean mixture.
  3. Adjust spiciness of salsa by adding more or less jalapeno and cayenne pepper.

I halved the recipe, using a full jalapeno and the juice of a lime and it was good. To me, it was not a salsa, more like a cold salad. My kid’s and husband didn’t like it nearly as much as I did but they can be weird about green bell peppers in things.
