This salsa is amazing! It’s the ideal summertime appetizer. I especially appreciate the added protein from the black beans. It tastes even better when placed over grilled chicken.

Ingredients
- ½ cup diced mango
- ½ cup diced green bell pepper
- ½ cup diced yellow bell pepper
- ½ cup seeded and diced Roma (plum) tomatoes
- ½ cup corn kernels
- ½ cup low-sodium black beans, drained and rinsed
- ⅓ cup apple cider vinegar
- ¼ cup finely chopped cilantro
- 1 jalapeno pepper, minced
- 1 lime, zested and juiced
- 2 tablespoons diced red onion
- 2 teaspoons white sugar
- ½ teaspoon salt
Instructions
- Mix mango, green bell pepper, yellow bell pepper, tomatoes, corn, black beans, apple cider vinegar, cilantro, jalapeno pepper, lime zest, lime juice, red onion, sugar, and salt together in a bowl.
- For a milder salsa, remove and discard seeds and membranes from jalapeno pepper before mincing.
- You can eat this right away or keep it covered and refrigerated between uses.

Quite tasty and 5 star worthy. Used pinch of sugar b/c mango was already super ripe and a scant Tablespoon of apple cider vinegar, may even omit the vinegar in the future. Served with grilled halibut that was marinated in a simple Italian dressing. Will def make again and again! Is probably also very good with chicken.

made a lot of changes as I didn’t have the bell peppers or fresh cilantro. made up the volume of the recipe with extra corn,black beans and half a poblano pepper. omitted the vinegar as per other reviews. It was fabulous ! everyone loved it and will make it again.
The basis of this recipe is good but the apple cider vinegar was overwhelming, especially with the lime juice. I think one could omit the vinegar entirely. The second time I made this for fish tacos I used lemon juice instead and it was wonderful… 5 star worthy. So for this recipe as is I am rating it 4 stars.
Delicious and great mixed with lettuce for a nice salad!
The apple cider vinegar is too strong (completely overwhelming the lovely mango/other flavors). I was unable to tell if the black beans were a good fit for this recipe, because my palate could not separate the ingredients. I love apple cider vinegar, but the ingredient amounts as written are out-of-balance.
