Ingredients

  1. 2 plum tomatoes, chopped
  2. 1 ripe avocado – peeled, pitted and chopped
  3. ¼ cup finely chopped red onion
  4. 1 clove garlic, minced
  5. 1 tablespoon snipped fresh parsley
  6. 1 tablespoon chopped fresh oregano
  7. 1 tablespoon olive oil
  8. 1 tablespoon red or white wine vinegar
  9. 4 ounces crumbled feta cheese

Instructions

  1. In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar, then stir in feta cheese. Cover and chill for 2 to 6 hours.

Yummy!! didn’t use oregano used cilantro instead. Also used avocado oil instead of olive oil.. Very light and perfect for the summer with grilled food.

I made this using 1/4 avocado, 1/4 medium totmato, 30 gr feta cheese, 1 tbs lemon juice, 1 tbs olive oil, salt and peper to taste. I make mix them all together until it becomes a smooth mixture. It’s very tasty recipe??

I made this switching out the oregano and parsley for cilantro on Thanksgiving and everyone LOVED it! It was gone within 5 mins and I DOUBLED the recipe! If you’re making it for large groups I suggest making it at least x4.

This is a fabulous recipe! I did not “chop” the ingredients into small bits – instead, I cubed the tomatoes and avocado because I chose to serve this as a side dish – more like a salad than a salsa. It was beautiful and tasty served with pan fried turkey breasts and fresh steamed green beans. Wonderful!
