It’s a welcome change to offer milder ribs to individuals who don’t want their rubs to be loaded with sugar. I usually have pork chops when I don’t have spare ribs.

Ingredients

  1. 2 cups canned yellow corn, drained
  2. 3 avocados, diced
  3. 1 bunch fresh cilantro, chopped
  4. 3 limes, juiced
  5. 2 shallots, chopped
  6. 1 small red chile pepper, chopped
  7. salt and ground black pepper to taste

Instructions

  1. Gently mix corn, avocados, cilantro, lime juice, shallots, red pepper, salt, and pepper together in a bowl.

Great by itself! I did some changes, first 1/2 the recipe as it was only two of us. Substituted jalapeno for the red pepper and used Spanish corn with green/red peppers. Left the rest the same. Was to go on fish tacos, but we ate it as a side and i got some healthy veggies in my teen age son! Win!

I took this to a luncheon & everyone liked it. It doesn’t say what kind of chile pepper to use. I got a Fresno chile, and it seemed really hot, so I used only about ¼ of the pepper. Also cut the amount of shallot a bit.

Didn’t have cilantro. Substituted parsley flakes. Didn’t have chili peppers. Substituted red pepper and chipotle chili powder. I’ll have to try it some day with no substitutes but for now why argue with success.

Yes! This is excellent and fresh-tasting and so yummy. I made this for my kids, so omitted the spicy pepper. I’ll make this a lot during the summer to wrap in a tortilla with some pinto beans, eat as a salad, or for dipping chips. Delish!
