Authentic Fire-Roasted Tex-Mex Salsa

I’ve spent years perfecting this recipe. I used to travel to Los Cucos, my favorite Tex-Mex restaurant in Houston, once every two weeks simply to get a pint of red salsa to go to take home with me. The greatest salsa in the world, I became dependent on it. I’ve finally perfected my own recipe, and it tastes almost exactly like the red salsa from Los Cucos.

Ingredients

  1. cooking spray
  2. 5 large Roma tomatoes, halved lengthwise
  3. ¼ large white onion
  4. 1 jalapeno pepper, stem removed
  5. ⅓ cup chopped fresh cilantro
  6. 1 lime, juiced
  7. 1 ½ teaspoons garlic salt, or to taste

Instructions

  1. Set an oven rack about 6 inches from the heat source and preheat the oven’s broiler to high.
  2. Spray a 9×13-inch glass casserole dish with cooking spray. Arrange tomatoes in the prepared dish with cut sides down. Add onion and jalapeno.
  3. Broil until tomato skins are blackened and blistered, 10 to 15 minutes. Remove onion and jalapeno halfway through cooking time, once skins are slightly softened.
  4. Combine broiled vegetables in a blender; add cilantro, lime juice, and 1 teaspoon garlic salt. Pulse until smooth. Taste and season with remaining garlic salt as desired.
  5. Use 8 small Roma tomatoes if you can’t find 5 large ones.
  6. For a spicier salsa, feel free to add more jalapenos.

This is my all-time favorite salsa and like you, I can drink it. Actually, crave it. However, the quality of the batch from Los Cucos restaurants varies, and making it at home is the best. I go to Walmart and buy 20 tomatoes, 1 big onion, 4 jalapenos and limes, cilantro and make one big batch. It freezes very well! Oh, and I add a little liquid smoke or sometimes grill all veggies on the grill. Thank you!

Fantastic and simple recipe and is just like the warm salsa served at many great Tex-mex restaurants. I recommend it warm but it’s great cold too. I use half an onion, 6 Roma tomatoes and about 4 jalepenos de-seeded and rinsed to make the mild to medium heat. 8 or more Jalepenos with seeds and all for the fiery stuff. Truly takes about 20 minutes to make.
