Ingredients

  1. 1 tablespoon olive oil
  2. 2 cloves garlic, minced
  3. 1 medium onion, diced
  4. 1 teaspoon paprika
  5. 1 teaspoon Italian seasoning
  6. Pinch of red pepper flakes
  7. 1 cup dry white wine
  8. One 14.5-ounce can diced tomatoes with basil, garlic and oregano
  9. One 10-ounce jar roasted red bell peppers, drained and diced
  10. Kosher salt and freshly ground black pepper
  11. One 8-ounce log fresh goat cheese, cut into eight 1-inch slices
  12. 1 tablespoon chopped fresh parsley
  13. 1 lemon, zested
  14. Crostini and crackers, for serving

Instructions

  1. In a 10-inch ovenproof skillet, combine the olive oil, garlic and onion. Cook over high heat, stirring, for 1 minute. Add the paprika, Italian seasoning and red pepper flakes and cook, stirring, until the onion starts to soften, 3 to 5 minutes.
  2. Pour in the wine and let it reduce for about 1 minute while stirring. Add the tomatoes, roasted peppers and a dash of salt and pepper. Cook, stirring, until the liquid has cooked off, 8 to 10 minutes.
  3. Meanwhile, preheat the broiler.
  4. Top the tomato and pepper mixture with the goat cheese, lightly pressing the slices into the sauce. Broil until the cheese is deep golden brown, 2 to 4 minutes. Sprinkle over the parsley and lemon zest. Serve hot with crostini and crackers to dip.

I love this, it’s quite low effort for a really big pay off. It looks spectacular and anyone curious about goat cheese will not be after this.

Very good. Quick, easy and different. Make sure your goat cheese is room temp when you slice, otherwise it crumbles and doesn’t make for great presentation. I served it with homemade croistini and the family loved the Italian twist to cocktail hour. Go for it if you are in a causal mood.

I have to agree with Anonymous below. After watching in the morning, I decided to make this. Absolutely  delicious! This is going to be a favorite ‘go to’ appetizer or even a light evening meal.

I saw this morning and KNEW I had to make it today.  Absolutely fantastic.  I didn’t change a thing, except that I spooned out enough for a small baking dish and three goat cheese coins as I’m testing to serve to company tomorrow.  Loved it!  I ate with crostini and also had some black olive tapenade I smeared on the toast before spooning the tomato and goat cheese on top.  This is going in to my entertaining file.
