Ingredients
- 4 tablespoons unsalted butter
- 4 tablespoons all-purpose flour
- 1 cup pale ale beer
- 1 cup grated sharp Cheddar
- 1 cup grated smoked Gouda
- 1/4 cup sour cream
- 1/2 teaspoon ground mustard
- 1/2 teaspoon smoked paprika
- 1 1/2 tablespoons minced pickled jalapenos
- Kosher salt and freshly ground black pepper
- Tortilla chips, for serving
Instructions
- Heat the butter in a small saucepan over medium-high heat. Add the flour and cook, stirring until smooth, for 2 minutes. Slowly whisk in the beer so the mixture is smooth. Simmer until thickened, about 5 minutes. Add the Cheddar, Gouda, sour cream, mustard and paprika and whisk until the cheeses are melted, 2 to 3 minutes. Stir in the jalapenos, and season with salt and pepper. Serve with tortilla chips.

I used a Lager instead of pale ale, tasted fine. I left the jalapeños on the side because I have some spicy adversed family members. But know this is super thick. We had soft pretzels but I dont think tortilla chips would have been up to the challenge. I even added half and half to thin it out. I also have no kitchen skills and made literally twice the recipe because I wasn’t paying attention to how much gouda I shredded. So this could be user error. But good flavor.
I didn’t like it. It had a sour taste to it. I used pale ale. Followed the recipe exactly as written.
