Roasted Garlic-Bacon Dip

Instructions

  1. Cut the tops off 2 heads garlic, drizzle with olive oil, wrap in foil and bake at 400 degrees until tender, 45 minutes. Make Onion Dip using the roasted garlic pulp in place of the sauteed onions. Add 6 slices chopped crisp bacon.

  3. Saute 1 each chopped yellow and red onion in olive oil over low heat until caramelized, 30 minutes; cool. Mix with 1 1/2 cups sour cream, 3/4 cup mayonnaise and chopped chives and scallions. Add Worcestershire sauce, salt and pepper.

Great dip, although I did use Alton Brown’s Onion Dip base for this as I have used it before and knew it was good, hence the 4 stars. People loved this dip, but I will say the garlic adds a good amount of heat. I may hold back about 1/2 a bulb next time.

Made this last year, we loved it! I did however cut back on a little mayo and added some room temp cream cheese. But that’s because I’m obsessed with cream cheese. Had to go through my past recipes to find this one just so I can make it for a special occasion this week!

This dip was AMAZING, but I’ll admit I tweaked it, which is why I gave it only 4 stars instead of 5. I used 2 cups of plain Greek yogurt instead of sour cream and only 1/2 cup of mayo. HUGE hit at our Super Bowl party!! Will definitely be making this again.

Really unimpressed…all I could taste was mayonnaise! Ended up adding a bunch more garlic, Worcester, onion powder and a splash of soy just to make it edible. If I make it again, will cut WAY back on the mayo.
