Raw Veggies with Chipotle Ranch Dressing

Ingredients

  1. 1 cup mayonnaise
  2. 1/2 cup sour cream
  3. 1/4 cup Italian (flat-leaf) parsley leaves, minced
  4. 2 tablespoons fresh dill, minced
  5. 1 tablespoon minced fresh chives
  6. 1 teaspoon Worcestershire sauce
  7. 1/2 teaspoon freshly ground black pepper
  8. 1/2 teaspoon white vinegar
  9. 1/4 teaspoon paprika
  10. 1/4 teaspoon kosher salt
  11. 1/8 teaspoon cayenne pepper
  12. Dash hot sauce
  13. 1 to 2 chipotle peppers
  14. 1 clove garlic, smashed
  15. 1/4 to 1/2 cup buttermilk (as needed for desired consistency)
  16. 3 pounds carrots, cut into batons
  17. 3 packages celery, cut into batons
  18. 6 cucumbers, cut into batons

Instructions

  1. In a food processor or blender, combine the mayonnaise, sour cream, parsley, dill, chives, Worcestershire sauce, black pepper, vinegar, paprika, salt, cayenne, hot sauce, chipotle peppers and garlic. Add the buttermilk to the desired consistency and blend. Chill for a couple of hours before serving, thinning with more buttermilk if needed.
  2. Serve the carrots, celery and cucumbers with the dip.

I make this all the time for parties and family get togethers.  I have a daughter who is not big on veggies but will eat them up with this dip.  It’s easy and it makes a lot!  It can easily be halved.

Best chipotle dressing EVER!!!!! …i couldn’t find the buttermilk and did not add the extra hot sauce since I’m not big on extra spicy food. I love how I can use it in wraps, salads, and as a veggie dip. Great recipe!

People loved this dip! I didn’t have chipotle peppers or buttermilk on hand, but the Worcestershire and vinegar (I had champagne not plain) make for a great flavor. I made this dip and Ina Garten’s vegetable dip and people preferred this one.

I like this dip. It’s got a good flavor and goes a long ways with the veggies.   It’s a lot of ingredients, but most people have these common things on hand.  One thing:  I’ve noticed that Ree makes pretty spicy food.  I put one chipotle in, because I wanted the smoky taste, it was fine.  But you could definitely taste it.  I think two peppers would have made it quite hot.

Really good! I used two chipotle peppers after tasting with just one and figured we could handle the extra spice. Great as a salad dressing or dip. Love the fresh taste that only comes from making it yourself with fresh ingredients!
