Ingredients
- 1 cup sour cream
- 1/2 cup buttermilk
- 1 to 2 teaspoons wasabi paste
- 2 to 3 tablespoons finely chopped fresh chives
- Salt and pepper
- 1 1/4 to 1 1/2 pounds green beans
- Frying oil
- 1 cup flour
- 1 1/2 teaspoons baking powder
- 1 tablespoon granulated onion
- 1 tablespoon granulated garlic
- 2 large eggs, beaten
Instructions
- Combine the sour cream, buttermilk, wasabi, chives and season with salt and pepper. Reserve.
- Bring a few inches of water to a boil, salt it and cook the green beans, 2 minutes. Remove, cold shock in an ice bath, drain and dry on a kitchen towel.
- Meanwhile, heat a few inches of oil over medium to medium-high heat. Combine 1 cup water, the flour, baking powder, onion, garlic and eggs in a bowl to form a batter. Dip the beans in the batter, a dozen at a time, and fry them up in batches. Cool on a cooling rack. Sprinkle with salt while hot.
- Serve the fried beans with the wasabi dipper.

not having any fresh green beans I used left over broccoli stalks cut into green bean like strips. I was good 🙂 I have to work on my batter though, it didn’t stick well. I also sprinkled a little bit of steak house seasoning salt on them after they came out of the fryer
These were very good. Made with fresh green beans and didn’t bother to blanch first. I never fry because I either burn or undercook. Followed Rachael’s instruction from the show and they turned out perfect
I made this full recipe for a little BBQ and it was a hit. I now make the ranch dip on a regular basis and eat it with steak, chicken… pretty much anything “normal” that is good with a wasabi based ranch.

Super Yummy!! The wasabi ranch dressing is great on just about anything. I’ve made it over and over and my kids love the green bean “french fries”!!
Recipe was easy to fix even if frying the beans time consuming yet fast frying time per batch. I liked that the batter was a very thin coating and you could still taste the bean itself. I took all to a bocce ball game in which the team eats gourmet at every game. They loved it–great critics. The only change I would make would be to put some of that wasabi paste or other spice to the bean batter to spice up the fried beans themselves. It was still delicious.
First batch realized my oil was not quite hot enough. I let the oil heat longer before adding the next batch and the green bean batter was perfectly crunchy, while the beans were cooked just right! 2 lbs were just enough for the four of us and a happy toddler. (simple ranch dressing was what we gave the baby) she gobbled them up.
