Caramelized Onion and Garlic Dip

Ingredients

  1. 1/4 cup olive oil
  2. 1 teaspoon fresh thyme leaves
  3. 1 shallot, peeled and chopped
  4. 2 cloves garlic, chopped
  5. 1 large Spanish onion
  6. 1 Vidalia onion, finely chopped
  7. 3 cipollini onions, finely chopped
  8. 1 medium red onion, finely chopped
  9. Salt and freshly ground black pepper
  10. 1 cup fat-free Greek yogurt
  11. 1 cup reduced-fat cream cheese
  12. 3 scallions, chopped (about 1/2 cup)
  13. 1 bunch fresh chives, chopped (about 3 tablespoons)

Instructions

  1. In a large saute pan over medium heat, add the olive oil. Add the thyme, shallots, garlic and all the varieties of onions. Saute, stirring constantly. (Onions absorb oil quickly, so add more if necessary.) Continue to cook until the vegetables are lightly browned, about 15 minutes. Remove from the heat and season with salt and pepper. Let cool slightly.
  2. In a medium bowl, add the yogurt and cream cheese and stir together. Add in the onions, scallions and chives. Stir well to combine.

I’m sorry, I was not a fan, neither were my guests at our open house gathering. Not much flavor of onion, and, yes, I did stand and stirred onions for longer then even suggested and got them good and caramelized. The onions tasted divine before I added them to the dish. I think what was most off-putting was the thyme flavor. I did not have fresh so used dried and I even cut back on what would be an equivalent measure in place of the fresh. Will not make again 🙁

Wow! If you live onions or dips or onion dips you will back flip for this! I saw the recipe over a year ago and couldn’t get it out of my head. Just made it for Christmas Eve and it was the best thing on the table!

I agree with adding a little more salt and pepper. Pumps up the flavor.

I have made about 4 more batches since then and taken them to various parties and it was a hit every time!

I added a bit more salt & pepper and it was even more tasty!!

We have a big Graduation Party coming up soon for our daughter. This looked great (saw the episode too. So I made a batch a few weeks ago as a test run. WOW. Just too good. Could not find cipolinni onions (used yellow onions instead or chives (used a little extra scallion. My daughter had friends over when I made the test batch. Amazing how fast it went and there is a bunch of dip if you follow the recipe.

oh my gosh, this is absolutely delicious! I actually cooked my onions on low for over an hour and waited until the onions were almost a marmalade before adding the salt and pepper. I am going to a family bbq tomorrow with part of the dip and we saved a little for ourselves for Sunday when we make the french dip sammies from this episode!

DELICIOUS – We are on a low-carb diet so we adapted the “Midnight Snack” episode — we used a fork instead of bread. The dip was placed in the center of the plate in an oval shape, meat on top of dip, and a hint of au jux poured around. OMG ! Talk about “The Best Thing I Ever Ate.” I used full fat cream cheese and regular Fage Greek yogurt. Could not find cipollini onions so just used regular yellow onions. Also, in order to carmelize onions in 15 minutes, the heat MUST be HIGH, and it is a MUST to stir constantly as stated in the instructions. If not stirred constantly, the onions will burn; and it is the flavor from carmelized onions that made the dip “over the moon” ! ! !

I ran to the grocery the instant I saw the show! Used a spanish, vadalia, red, shallot and green onion. I cooked the onion for over 15 minutes and they were perfect. The greek yogurt I used was FAGE. This is the best dip/spread I have ever made. I used it the next day on a sub… YUM-O! Very light, great with pretzel chips. I think the reviewer that said this was bland did not use enough salt and pepper. Packed full of flavor just like all of Big Daddy’s dishes!

This dip is amazing! So many levels of flavor. We did not use the exact same medley of onions, but we did use a variety. The sweetness of the cooked onions, the creaminess of the cream cheese, the bite of the scallions and chives … Big Daddy is genius again! For the reviewer who found it bland, perhaps they did not add enough salt or caramelize the onions long enough – we cooked a little longer than 15 minutes on low heat.

I never thought I would find something full of onion that I didn’t like. Big Daddy proved me wrong. This dip has no taste. I tried re-doctoring small portions of this to make it edible – ranch, sour cream, cheese, etc., but nothing worked. Total disappointment.
