Bacon Onion Dip

Ingredients

  1. 1 tablespoon extra-virgin olive oil
  2. 4 ounces double-smoked slab bacon, diced small
  3. 1 large onion, diced small
  4. 1/2 teaspoon kosher salt
  5. 1 cup whole milk Greek yogurt
  6. 2 tablespoons minced fresh chives
  7. 2 large carrots, cut on a sharp bias to form chips, for serving, optional
  8. Pita chips, for serving, optional

Instructions

  1. Place the olive oil and bacon in a medium skillet over medium heat. Cook, stirring often, until the bacon is golden brown and crispy, about 8 minutes. Using a slotted spoon, remove the bacon to a paper-towel-lined plate. Add the onions and salt to the pan and cook slowly in the bacon fat, stirring often, until deeply caramelized, about 15 minutes. Add the onions to the bowl with the bacon and let cool for about 5 minutes. Stir in the yogurt and chives. Cover and refrigerate for at least 1 hour to let the flavors mingle. Serve with the carrot “chips” or pita chips.

Did a trial run of this dip before Thanksgiving. It turned out good. I cooked the bacon on a lipped sheet pan in the oven, then poured the bacon fat into a pan to caramelize the onions. Bacon was way easier to cut up when cooked. Think I’ll add more than recipe called for though, and use sour cream instead of yogurt for a tiny bit more flavor. You pretty much can’t mess it up with onion and bacon.

Everyone raved over this dip! It’s so flavorful that you can’t stop eating it. I used the Fage 5% Greek Yogurt because it’s so creamy and rich. The caramelized onions are so sweet and really put a punch in the flavor.

Delicious dip!! Make sure to use GOOD quality bacon and I substituted with sour cream- it came out great!! Giada never disappoints!

Delish!! I Love Giada and I’m always looking for an easy appetizer. I love bacon and used half of a package. If you freeze it for at least 15 min it’s easier to cut.  Also used sour cream instead of yogurt and skipped the chives and it was still amazing. Even my 6 yr old loved it! Definitely making again!
