Spider Web Deviled Eggs

Ingredients

  1. 1 tablespoon black gel food coloring
  2. 1 dozen large eggs, preferably older
  3. 1/3 cup mayonnaise
  4. 1 teaspoon distilled white vinegar
  5. 1/4 teaspoon kosher salt
  6. 1/4 teaspoon freshly cracked black pepper
  7. 1/2 teaspoon sweet Spanish paprika
  8. 12 sprigs fresh dill, for garnish

Instructions

  1. Combine 2 quarts water with the food coloring in a saucepot. Gently place the eggs in the water. Set over high heat and bring to a boil. Once boiling, cover, remove from the heat and set aside for 10 minutes.
  2. Remove the eggs from the water and place on paper towels. Lightly tap the eggs with a spoon to crack the shells. Transfer the eggs to a container with some ice and pour the cooking liquid over the eggs. Chill until completely cold.
  3. Gently peel the eggs. Slice a thin sliver off the narrow end of each egg so the eggs can stand upright when plated. Cut off the wide end of each egg and use a small spoon or the tip of a butter knife to gently scoop out the egg yolk into a mini food processor or mixing bowl. Process the yolks (or smash with a fork). Add the mayonnaise, vinegar, salt and pepper and mix until smooth. Spoon or pipe the yolk filling into the egg white cups.
  4. Place the egg white cups upright on a serving platter. Sprinkle a pinch of paprika on top of the yolks. Finish each egg with a sprig of fresh dill. Serve chilled.

please help!! i love the marbling look. i did it in red and blue.  but when i went to peel them many of them fell apart.  they look like a zombie already got to them .

We made this recipe during the pandemic of ‘20. My Grandchildren made this and oh boy it surely work out!! Our family had a Halloween Halloween Bake-off instead of trick or treating!!! The webs were so good on the whites of the egg and the egg mixture was delicious. We’re making it this year because it’s so darn cute! Thanks Trisha!!( by the way my daughter has the same name!)

If you don’t have vinegar, use some pickle juice from the pickle jar.

These are DELISH TRISH !!!   I’ve never used vinegar in my filling and it adds a really nice zing.  When I feel like “going all out” I add mustard, grated onion and dill relish and “whatever” strikes my fancy. I make red and green for Christmas and when I want them to appear more elegant……I boil them in strong tea which adds a beautiful pale brown marble color.

I love it! Of course, I was making 2 dozen eggs for a potluck and leaving them whole wasn’t practical, but HOW COOL! I did a dozen black and a dozen orange. The orange obviously not as stark but intermixed on tray, they looked very Halloween-y. I used my own recipe for the yolks which includes a little horseradish and sirracha. To each his own, right?  But I double dog dare ya to try it!
