Pimento Deviled Eggs

Ingredients

  1. 12 large hard-boiled eggs, peeled
  2. 8 ounces grated sharp Cheddar
  3. 1/2 cup sour cream
  4. 1/4 cup cream cheese, softened
  5. 1/4 cup mayonnaise
  6. 2 teaspoons Creole mustard
  7. 2 teaspoons sweet pickle relish
  8. Dash hot sauce
  9. Kosher salt and freshly ground black pepper
  10. One 4-ounce jar finely diced pimientos, drained
  11. Thinly sliced green onion, for garnish
  12. Paprika, for garnish
  13. Crushed butter crackers, for garnish

Instructions

  1. Slice the hard-boiled eggs in half. Pop the yolks with a small spoon into the bowl of a food processor, then add the Cheddar, sour cream, cream cheese, mayonnaise, mustard, relish, hot sauce and some salt and pepper. Run the food processor until smooth. Remove the filling to a bowl and fold in the pimientos.
  2. Transfer the mixture to a piping bag fitted with a large star tip and pipe into the egg whites. Garnish with green onions, a dusting of paprika and crushed butter crackers.

These are pretty good.  Filling makes much more than it takes to fill the eggs, so you end up with leftover filling (which is really good on crackers).  I agree with the first commenter – this show is great – very tired of the game show format on Food Network.

I just love this new show on Food Network!  I wish there were more actual cooking shows and not so much game show junk.  I would probably start watching more! IMHO
