Ingredients

  1. 1 dozen eggs
  2. 1/4 cup mayo
  3. 1 teaspoon yellow mustard
  4. 2 teaspoons chopped pickles
  5. 1 teaspoon pickle juice
  6. 1 teaspoon sugar
  7. 1 teaspoon white vinegar
  8. Hot sauce, such as Tabasco
  9. Salt and black pepper
  10. Paprika, for sprinkling

Instructions

  1. Fill a large pot with enough water to cover the eggs, then bring to a boil. Using a slotted spoon gently lower the eggs into the boiling water. Cover and let simmer for 10 minutes. Remove the eggs from the heat and run under cold water until completely cooled.
  2. Peel the eggs, cut in half and scoop out the yolks into a medium bowl. Add the mayo, mustard, pickles, pickle juice, sugar, vinegar, hot sauce and salt and pepper to taste, and mix with a fork until well combined.
  3. Using a small spoon, fill each egg white half with a generous teaspoon of filling. Lightly sprinkle with paprika to garnish.

I use Miracle Whip which would replace the mayo, sugar and vinegar. I also use sweet pickle relish. Instead of using a spoon, I load the yolk mixture into a plastic baggy, cut the bottom corner off and pipe the filling into the whites. Easy, quick and works perfectly!

No matter the recipe, I omit the sugar. It’s a simple recipe, adaptable to any taste. These were delicious!

I use both Miracle Whip and Mayo. I substitute finely chopped jalapeños for dill or bread and butter pickles relish. 1 tsp of garlic powder. 1 tsp of onion powder. 2 tsps of sugar. Salt and pepper to taste. I leave my cooked yolks a little chunky with a slight shadow of paprika on top. My sons like some hot sauce twang mixed in so I make 2 versions to feed the crews.
PS…. The boiled whites can be soaked in beet juice overnight and filled with the different types of stuffing. So pretty for Easter meals.

Just my take lol at home I always use miracle whip. Other than that her recipe. But in the hotel I only have mayo.

I use horseradish dills not sweet pickles. I also add a 12 tsp prepared horseradish sauce to kick the flavor up a notch.  I garnish with bacon and chives in addition to the paprika.
