Ingredients

  1. 12 large eggs
  2. 1/2 cup mayonnaise
  3. 1 tablespoon relish
  4. 2 teaspoons yellow mustard
  5. Kosher salt and freshly ground pepper
  6. 1/2 cup finely diced yellow bell peppers, plus more for topping

Instructions

  1. Place the eggs in a wide pot, cover with cold water by 1 inch and bring to a boil. Reduce the heat to medium low and simmer 10 minutes.
  2. Drain the eggs and run under cold water to cool. Peel the eggs and cut in half lengthwise. 
  3. Mash the egg yolks in a bowl with the mayonnaise, relish and mustard; season with salt and pepper. Stir in the bell peppers. 
  4. Spoon the filling into the egg whites. Top with more bell peppers.
