Ingredients
- 2 (11 ounce) packages white chocolate chips (such as Ghirardelli)
- 12 peppermint candy canes, broken into pieces
- ¼ teaspoon peppermint oil
Instructions
- Line an 11×17-inch baking sheet with parchment paper.
- Melt white chocolate chips in a microwave-safe glass bowl on 50 percent power for 3 minutes. Stir well until the bowl is no longer warm. Microwave for 3 more minutes more, then stir again. Heat for 1 more minute and stir again. Repeat as necessary until chocolate is completely smooth.
- Stir candy canes and peppermint oil into melted chocolate until well combined. Spread onto the prepared baking sheet and smooth with a spatula. Refrigerate until set, 30 minutes to overnight. Break into pieces and store in an airtight container.
- You can find peppermint oil at a cake supply store. Peppermint oil is not the same as peppermint extract.

Perfect, easy, and delicious!
I make this every year and it’s always good. I use two cookie sheets so that the bark is very thin. I also heat my cookie sheets in a very low oven (170 degrees) before spreading the bark on it. This keeps it from hardening too fast so that I can spread it thin and don’t have to rush. After I’m satisfied, I put the pans in the refrigerator and the bark hardens nicely.

I wasn’t sure whether this recipe needed regular sized candy canes or the miniature ones. I used regular and was happy with the taste. I also added drops of the peppermint oil until I was happy with the flavor. This is very easy to make according to your preference. This would be a great addition to a cookie tray at Christmas time, or to give as a gift at Valentine’s.
