White Chocolate-Mocha-Oatmeal Cookies

I came up with this quick and simple recipe one evening. It’s a fantastic way to enjoy a little of sweetness without going overboard and feeling bad about it!

Ingredients

  1. ¼ cup shortening
  2. ¼ cup brown sugar
  3. ½ cup white sugar
  4. 1 egg
  5. 3 tablespoons vanilla extract
  6. 4 teaspoons instant coffee
  7. ½ cup warm water
  8. 1 teaspoon cocoa powder
  9. ½ teaspoon baking soda
  10. 1 ⅓ cups all-purpose flour
  11. 2 cups quick oats
  12. 6 ounces white chocolate chips, or more to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  2. Mix shortening, brown sugar, white sugar, egg, vanilla extract, instant coffee, warm water, and cocoa powder together in a bowl until smooth. Add baking soda and 1/3 cup flour. Continue adding flour 1/3 cup at a time until fully incorporated. Mix in oats and chocolate chips.
  3. Use a small cookie scoop to place 12 cookies on the prepared baking sheet.
  4. Bake in the preheated oven for 10 minutes. Remove from the oven and let cookies sit 5 minutes. Transfer cookies to a wire rack to cool completely.
  5. Repeat 2 more times with remaining dough to make 36 cookies.
