Whipped Strawberry Cream Cheese Frosting

Ingredients

  1. ½ cup heavy whipping cream
  2. 1 (4 ounce) package cream cheese, softened
  3. ¼ cup butter, softened
  4. ¼ cup strawberry puree
  5. ½ teaspoon vanilla extract
  6. 1 ¼ cups confectioners’ sugar

Instructions

  1. Chill a large glass or metal bowl and the beaters from an electric mixer for 30 minutes.
  2. Beat heavy cream in the chilled bowl with the electric mixer until stiff peaks form, about 5 minutes.
  3. Beat cream cheese in a separate bowl until creamy, 1 to 2 minutes. Add butter; mix until well-blended, 1 or 2 minutes. Stir in strawberry puree and vanilla extract. Add confectioners’ sugar and mix until well-blended.
  4. Gently fold whipped cream into cream cheese mixture until evenly incorporated.

This was delicious! I used it on a 2 layer 8″ cake. I almost didn’t have enough, and wouldn’t have had enough if I had relied on using it as the filling. Definitely will make again but will double the recipe next time!

This was PERFECT. It’s exactly what I needed for my pistachio cupcakes. For the puree, I cooked the frozen strawberries (along with the sugar and lemon juice) and reduced it, then put it in the food processor. Absolutely wonderful.

This frosting was wonderful on my daughter’s strawberry birthday cake. I made it as is but added a little lemon juice to brighten the flavor. My daughter loved it! When folding the cream cheese mixture into the whipped cream, do so in thirds so as to not collapse the air in the cream.

Very easy, light and delicious, not overly sweet. I was concerned it was too thin but folding in the whipped cream made the consistency perfect. I did add some dry, instant jello to pink it up and boost the strawberry flavor, maybe 1/3 cup. I made a four layer nine inch round cake so I did double the recipe. This will be my go to for strawberry icing.

I was looking for a frosting with less sugar than the usual 3+ cups. This one turned out wonderful. The only modification I made was to put the puree in a small sauce pan and reduce it by half. Then added the full amount, just to give it a little more flavor.
