Whipped Ricotta Dessert

This delicious microwaveable peanut brittle is incredibly simple to prepare. You don’t need a candy thermometer!

Ingredients

  1. 1 (8 ounce) container fresh ricotta cheese, well drained
  2. 1 cup heavy cream
  3. ¾ cup powdered sugar
  4. 2 tablespoons light flavored honey
  5. 1 tablespoon lemon zest
  6. 20 amaretti cookies
  7. 20 fresh blackberries
  8. 5 fresh raspberries
  9. 5 leaves fresh mint
  10. ¼ teaspoon ground nutmeg

Instructions

  1. Beat drained ricotta, cream, powdered sugar, and honey in a stand mixer on low speed until creamy, about 1 minute. Whip on high speed until fluffy, 2 to 3 minutes. Fold in lemon zest. Transfer mixture to a piping bag and refrigerate while you prepare the serving glasses.
  2. Place cookies into a resealable plastic bag; seal the bag and crush cookies into chunky crumbs. Set aside 1 tablespoon for garnish. Divide remaining crumbs evenly among five 6-ounce glasses.
  3. Pipe ricotta cream into each glass. Sprinkle reserved crumbs over top, then garnish with blackberries, raspberries, mint, and nutmeg. Refrigerate for 1 hour before serving.

Yummy! I just made this and I can believe how great it tastes. I had to use lemon extract, as only have oranges for zest (and I really wanted something lemony for the 4th of July). I doubled the recipe and used graham crackers and blueberries cuz thats what I had on hand. I´m sure this would taste wonderful no matter w! Thanks so much for this great recipe 🙂

I didn’t have ricotta, or the cookies so substituted cream cheese and crushed oatmeal honey granola bars and graham cracker crumbs. The crumb mix gave this dessert a not too sweet crunchy layer and topping. Really light and creamy dessert. My first-time guest and I both agreed, though, that the creamy cheese mixture was too sweet. The recipe doesn’t need both honey and icing sugar in those quantities, especially if the berries are sweet. My guest initially asked if it was ice cream because it was so creamy. I’d definitely make this again but will reduce the icing sugar or possibly just use honey. Will also try with other fresh fruit, like mango, and perhaps add some unsweetened flaked coconut to the crumb layer & topping!??
