Warm Apple Buttermilk Custard Pie

Sweet, custardy, and not at all like grandma’s pie.

Ingredients

  1. 1 (9 inch) pie shell
  2. ¼ cup butter
  3. 2 tart apples – peeled, cored and sliced
  4. ½ cup white sugar
  5. ½ teaspoon ground cinnamon
  6. ¼ cup butter, softened
  7. 1 ⅓ cups white sugar
  8. 4 eggs
  9. 1 teaspoon vanilla extract
  10. 2 tablespoons all-purpose flour
  11. ¾ cup buttermilk
  12. ¼ cup white sugar
  13. ¼ cup packed brown sugar
  14. ½ cup all-purpose flour
  15. ¼ teaspoon ground cinnamon
  16. 3 tablespoons butter

Instructions

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. To Make Apple Filling: Melt 1/4 cup butter or margarine in skillet over medium heat. Add apple, 1/2 cup white sugar, and 1/2 teaspoon cinnamon. Cook 3 to 5 minutes, until tender. Set aside.
  3. To Make Buttermilk Custard: In a large mixing bowl combine 1/4 cup softened butter or margarine with 1 1/3 cups white sugar. Beat until creamy. Add eggs one at a time, beating until yellow disappears. Mix in vanilla, then 2 tablespoons flour. Combine thoroughly, then pour in buttermilk, beating until smooth.
  4. Fit pastry into pie pan and prick with a fork. Spoon apple mixture into crust, then pour buttermilk custard over it.
  5. Place in preheated oven and bake for 30 minutes.
  6. To Make Streusel Topping: While pie is baking, combine 1/4 cup white sugar, brown sugar, 1/2 cup flour, and 1/4 teaspoon cinnamon in a small bowl. Cut in 3 tablespoons butter or margarine until mixture is crumbly.
  7. Remove pie from oven after 30 minutes and sprinkle streusel topping over custard. Return to oven and bake for an additional 40 to 50 minutes, until a knife inserted in center comes out clean. Let stand 1 hour before serving.

Tried this out before Turkey day. With a few tweeks thanks to all the helpful hints, This is a keeper!! I used 6 big apples granny Smith and Cortlands. no sugar and 1 small pad of butter in my saute pan. 1/2cup sugar for custard, and 1/2 the sugars for streusel. came out perfect.!!

Wonderfully delicious pie! I reduced the sugar from 1 1/3 cup in the custard mix, to 1 cup like previous reviewers. I also added 1 tablespoon of fresh lemon juice to the custard mix along with 1/4 tsp nutmeg. Affer pie finished cooking the 50 minutes after adding crumble top, I broiled the top for 5 minutes under the broiler and made a perfectly crisp top. INSANELY EXCELLENT!!!

I wanted to make something a little different for my moms and grandpas birthday dinner so I thought this would be a great idea. I read some reviews and took some bits and pieces of recommendations and I would say the result was great. When cooking the apples I did three Granny Smith, with a half tbls of butter, 1/4 cup would be way too much, I did one and a half tbls of sugar and a tsp of cinnamon. It was just the perfect amount of sweetness and tartness. Next for the custard, I read a lot of reviews where people either did 1 cup or a half cup so I went for the middle and did 3/4 cup of sugar. I also saw that some people were saying custard was still soft and it didn’t set after taking it out of the oven so I added another tbls of flour and cooked it for about 53 minutes and when I took it out it was perfect. I used a deeper dish pie pan as well after seeing a lot of reviews that it was too much custard and I think using the deeper dish was the way to go. It was the perfect amount of custard, apple and topping to where it didn’t over flow. Everyone really loved the desert and I didn’t have any comments on it being too sweet .

I will be making this pie again. I only had one large red apple, and I saw that lots of people thought it was too sweet, so I cut some sugar back, too. It was very good. Good way to use up buttermilk too.

Hands down the best pie I have ever made. It is a real crowd-pleaser and is always the dessert requested at holidays and birthdays. Even my picky Aunt and know-it-all Grandmother love this pie, and that speaks volumes. I have made this pie dozens of times and it turns out perfectly every time. I follow the recipe exactly, with the exception of adding a little bit of nutmeg, only because I love it, it doesn’t need it. I have tried this with buttermilk from the store, as well as with doing my own buttermilk hack, and it is wonderful both ways. Thank you for this recipe, it is superb.
