Although I don’t enjoy meatloaf at all, my mother made this particular recipe, and the whole family loved it! Unusual meatloaf that is delicious! Use fresh sausage rather than frozen! If the bread before cooking seems too moist, add additional crackers. Fantastic for sandwiches the next day!

Ingredients

  1. ⅓ cup white sugar
  2. 3 tablespoons cornstarch
  3. ¼ teaspoon salt
  4. 2 ½ cups milk
  5. 1 ½ teaspoons vanilla extract

Instructions

  1. In a saucepan, combine the sugar, corn starch and salt. Add milk and cook over medium heat, stirring constantly until mixture thickens. Add vanilla and continue to cook for 2 to 3 minutes.
  2. Pour into individual molds rinsed with cold water; chill until firm and unmold.

I’ve made it multiple times now and it’s simple to improve the recipe. Medium heat and constant stirring is a MUST and for longer than the recipe states. It’s a bit bland, but just adding more vanilla isn’t quite the solution (but it doesn’t hurt.) Instead, also add a little more salt and more sugar, to taste. I chose to use 1% milk but substituted 1/4 cup of milk for half and half. I upgraded to 4 heaping tablespoons of corn starch. Perfect! *Note: The second batch I added sliced bananas and vanilla wafers, but too much extra corn starch and got the consistency of flan. *The most recent time, I added 3 tablespoons of dark cocoa powder. Poured it to a graham cracker crust, served with whipped cream. Nailed it! – Next, I’ll experiment with oat milk.

I wanted a recipe with no eggs as they are too much bother. I cut the recipe in half. Worked out just fine. Made two puddings. Think I’ll use a double boiler next time. It kind of stuck on the bottom over medium heat. Then I had a few lumps even with stirring constantly. But delicious nonetheless. Definitely a keeper!

After reading the reviews that said the pudding was too thin, I used 2 cups of milk instead of 2-1/2. It was still too thin, almost pourable. It did taste good, just too thin.

When I tasted it, I knew I had eaten it before. It took me a few minutes, but I figured it out. It is Flan. I like Flan. But not everyone does. I would make it again. Light, not heavy. And not overly sweet.

I love this pudding! I’ve made it a few times and it’s simple and tasty. Sometimes I add chocolate or butterscotch chips while it’s warm and let them melt. The last time, I added two decaf chai tea bags and left them in until the milk started to thicken and stick to the bags. Chai pudding is delicious! Next time, I’ll try earl grey!

8.19.21 A little on the soft side, but Oh My, was this ever good! It doesn’t get much easier than this, just plan ahead because it does need time to chill and thicken. This is one of those recipes where simple is best, and it just doesn’t get much easier than this. Enjoyed with one simple sliced strawberry on top. Very, very nice and even a bit elegant looking.

This took about 10 minutes to make, but people are right when they say it’s bland. I used one vanilla bean instead of using vanilla extract, so it had double the vanilla flavor. You could definitely taste the vanilla in the aftertaste, but otherwise it doesn’t have any real flavor. ??To fix it up, we let it set and then added a little bit? of vanilla rum and salted caramel to each ramekin. That made it delicious!

I followed the recipe exactly, but the pudding did not set up properly–was thin and runny. I’m almost embarrassed to admit that it didn’t work–seems so basic, and I’m an experienced cook. I don’t know what the problem was.
