Ingredients
- ¾ cup superfine sugar
- ⅔ cup butter, softened
- 3 large eggs
- 1 ½ cups self-rising flour
- 1 teaspoon vanilla extract

- Gather all ingredients. Preheat the oven to 350 degrees F (175 degrees C). Grease a 12-cup muffin tin or line cups with paper liners.

I made the vanilla cupcakes and read the step 2 completely wrong ♂️ I mixed the superfine sugar with the eggs instead of the softened butter. When I realised I only has the butter and flour left I, I quickly added the butter mixed it thoroughly and then the flour. To my surprise it came out perfect Thank you it tastes heavenly and I’m glad I did add a frosting otherwise it would’ve been too sweet ❤️

When I was making these, the batter slowly started to look like cookie dough. So I would name them cookie cupcakes.
I think 1 1/2 cups of flower is too much, which makes it hard and dry.

All I have to say is that I have baked for a long time, so I have the experience not to over stir and all that stuff. This cupcake recipe leaves you with a hard type cake texture that is more like a cookie than anything else. Very interesting!

This is an amazing rescue and I added honey, cinnamon and sprinkles. It got really thick so I added a little bit of water! HIGHLY RECOMMENDED
These were soo light and fluffy WITH MODIFICATIONS. This is going to be my go-to cupcake recipe, and is also the perfect base for other add ons Modifications: – 1 cup superfine sugar (1 cup instead of 3/4, I also pulsed regular sugar in a Nutri bullet a couple of times, since I did not have “superfine” sugar) – 2 eggs instead of 3 – 2 teaspoon vanilla extract instead of 1 – 1/2 cup of almond milk, or any milk. – I just mixed the ingredients with a spatula, you don’t need to spend time overworking the batter with an electric mixer

I changed it a little. I didn’t have self rising flour so I replaced it with 1.5 cup of plain flour with 2 teaspoons of baking powder and 1 teaspoon of salt. I only added two eggs and 3/4 cup of milk. Came out perfect! Soft and fluffy.
OMG. BEST. CUPCAKES. EVER. These are very very good. I LOVE THEM !!!! I made my own buttercream icing to go on it that made it so much better then it already was. Its my mom’s birthday today so I decided to make her cupcakes. I found this recipe and Oh My God these were sooooo good!!!!!
