Cookies made with peanut butter and jelly that are soft and delectable. No need for flour.

Ingredients

  1. 1 cup peanut butter
  2. 1 cup white sugar
  3. 1 egg
  4. 1 teaspoon vanilla extract
  5. 2 tablespoons fruit preserves, any flavor

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium bowl, mix together peanut butter, sugar, egg, and vanilla until well blended. Drop by teaspoonfuls onto ungreased cookie sheets. Use a fork to make a criss-cross pattern on the top. Make a small hole in the top of each cookie using the handle of a wooden spoon. Fill the holes with preserves.
  3. Bake for 8 to 11 minutes in preheated oven. Allow to cool for a couple of minutes on the cookie sheets before transferring to wire racks to cool completely.

I changed the recipe a bit by adding some flour and salt and an extra egg and it turned out really good! I baked for 11 min. Make sure not to add too much jelly otherwise it will run over onto the cookie tray which happened with a couple of mine. But overall they turned out nice and chewy and definitely fulfills a PB&J craving

Mac was my father father’s name we heard it all our life. So I picked this recipe. I Glad I did .I used a lot less sugar alittle less butter because I cut most all sugar out of my diet. I LOVE THESE ! They are as has health as a treat gets !!!!!!! I think next time I will not use jam but drizzle them with chocolate. U have to change thinks up alittle sometimes. Essentially since I see these as my go to treat !! Ps Babkitchen cookies will end up that way if you use all natural peanut butter. There is a trick dump all surface oil into a containeruse your peanut butter. Also since I experienced that also I do not add about 2 TB of the butter.

Super good you can always put less sugar if you don’t want it as sweet or less peanut butter if u don’t want it as strong. Make sure you take it out at 10 min and let it cook the rest on the pan.

This recipe works, is super easy, and is amazing! I’m not sure if it’s because others are using more oily peanut butter or something that’s causing the trouble? But I had zero issues. I also live in a high desert at high altitude, so perhaps climate has a bit to do with it as well. I made mine fairy large and I cooked them for 10-11 minutes. They came out PERFECT. The jam is easy to add, and I added 2 mini marshmallows on top of the jam on half of the batch and it was amazing. Tips: don’t make a big indent for the jam, just a small imprint from the back of a teaspoon is what I did (again, I made my larger in diameter) and just dropped in small amounts of jam. If you go too deep you risk the jam leaking through the bottom of the cookies.

Made them exactly as the recipe called for. My husband couldn’t stop raving about them. Def double recipe. In my opinion the preserves/jam makes the cookies a bit too sweet. I might cut the white sugar down a bit in the future.

I used this recipe as a base, so I altered it heavily. I needed to use up some applesauce, only had one egg, and I wanted to use oats. So I used these ingredients and added baking soda, salt, and a bit of flour as a binder. I followed the previous recommendations of less sugar, etc. They turned out perfectly, exactly what I wanted and not too sweet. Very healthy for a dessert item. I’ll definitely use it again and next time I’ll have enough eggs and make the actual recipe, haha.

Simple, great flavor. I think next time I’ll use crunchy PB. I used strawberry jam which was perfect. I was surprised by how crumbly it was, wasn’t sure it would hold together but it did, with the stickiness of the PB. Denser than a cookie, lighter than fudge, something quite wonderful in between the two.

This was ok, the first batch I made the cookies too large and it didn’t turn out with the extra jelly. I made a second batch with much smaller cookies and much less jelly. I liked that these were easy and flourless.

These are pretty tasty. Used 3/4 the amount of sugar (1C white, 1.5C coconut palm). I added a bit of oil as I use natural peanut butter and cookies always seem to be dry otherwise. Used my homemade fruit reductions on a few instead of jam and they were tasty. We liked the green apple reduction paired with the peanut butter mix! Tangy and sweet! I tripled the recipe, made 40 regular cookies plus 15 we mixed in raisins for and nixed the jam. I think I’d try creaming the peanut butter and sugar first next time, I found the sugar didn’t quite incorporate.
