The Captain’s Mango Ice Cream

With a hint of jelly on top, soft, delicious peanut butter cookies. I don’t need flour.

Ingredients

  1. 4 mangoes, peeled and cubed
  2. 2 cups heavy whipping cream
  3. ¾ cup packed dark brown sugar
  4. ¼ cup light corn syrup
  5. 4 tablespoons spiced rum
  6. ½ teaspoon kosher salt

Instructions

  1. Combine mangoes, cream, brown sugar, and corn syrup in a blender or food processor. Blend on high for 30 seconds.
  2. Transfer to an airtight container. Stir in spiced rum and salt. Refrigerate, 8 hours to overnight.
  3. Pour mixture into an ice cream maker and freeze according to manufacturer’s instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

I added just a bit if vanilla extract Andy more mango Tom suit my taste. I also used agave instead of corn syrup. I ran food processor for probably 5 minutes, poured mixture into ice cream maker for 45 minutes to result in a much lighter smoother ice cream, magnificent!

Delicious and easy! I added a splash of vanilla and when I make it again might increase the Captain Morgan a bit. Everyone who has tried it loves it. I like the fact you don’t have to use eggs for this recipe.

Will definitely give this a try since this recipe doesn’t use a bunch of egg yolks. Can you please indicate the type of mango you use since the amount of flesh varies between a smaller champagne/Manila mango vs a much larger Mexican/Kent mango, having the weigh or volume of the flesh would be very helpful . Thanks!
