Tart Meyer Lemon Sorbet

I tried several mayo-based recipes before coming up with this one because I don’t like them. This meal has a lot of taste!

Ingredients

  1. 1 ¾ cups water
  2. ¾ cup honey
  3. 2 cups Meyer lemon juice
  4. 1 tablespoon lemon zest

Instructions

  1. Combine water and honey and a microwave-safe bowl; heat in microwave for about 30 seconds. Stir water until honey is dissolved.
  2. Stir lemon juice and lemon zest into honey water; pour into an ice cream maker. Process according to manufacturer’s instructions for 25 minutes.
  3. Scrape sorbet into a chilled loaf pan and freeze.

It’s rather tart … I might play with it a little next time but it was terrific. It took a bit longer to freeze than I expected but it worked well. It was finished in time and that’s what was important.

This is so refreshing! Turned out more like a granita than a sorbet really. I garnished it with some candied lemon peel and a sprig of mint. Turned out so pretty. Would make a nice dessert for a dinner party. Thanks for the recipe!
