Sugar Cookie Frosting

If preferred, this zucchini cake recipe can be made in two loaf pans. My son adores it since it freezes well and stays incredibly wet. Although it’s delicious plain, I generally top it with cream cheese icing.

Ingredients

  1. ½ cup shortening
  2. 4 cups confectioners’ sugar
  3. 5 tablespoons milk, or more as needed
  4. 1 teaspoon vanilla extract, or more to taste
  5. food coloring (Optional)

Instructions

  1. Gather all ingredients.

  3. Beat shortening in a large bowl until creamy. Gradually mix in confectioners’ sugar in small amounts, alternating with 5 tablespoons milk, until smooth. Mix in vanilla and continue to beat until frosting is stiff and glossy, about 5 minutes, adding more milk if needed.

  5. Mix in food coloring, separating into smaller bowls if using multiple colors.

  7. Spread frosting on cookies or fill piping bags and decorate cookies as desired.

You need one more cup of flour and 1/2 cup more butter for the cookies. For the cookie frosting 5 tablespoons of milk is too much I had to add more shortening and a cup of flour to get my icing to thicken.

I made soft gingerbread cookies, and I wanted a frosting that would be easy to decorate with, easy to make, and easy to eat. Score! I might try butter flavor shortening for different type of richer cookies. But this was so much better than “Royal icing”!!!!I love this soft but not too soft icing. Thanks!

My daughter wanted something sweet. We went in to the pantry closet and found a mix of snickerdoodle. We put aside the topping that came with it and made this recipe instead. We didn’t alter anything. She had fun making this and they were trophy cookies and I’m not one for frosting and I really enjoyed the cookies and didn’t scrape off the frosting as I always do.
