Strawberry Poke Cake

Strawberries, either fresh or frozen, and whipped cream with sugar take the cake mix from the box one step farther. After being cold, slice into portions and add sweetened whipped cream to each one. If desired, add strawberry slices as a garnish. Keep leftovers in the fridge.

Ingredients

  1. 1 (15.25 ounce) package white cake mix (such as Pillsbury®)
  2. 3 ounces white cake mix extender
  3. 1 ¼ cups water
  4. 4 egg whites
  5. ⅓ cup vegetable oil
  6. 1 (10 ounce) jar strawberry preserves
  7. 1 ½ cups sliced fresh strawberries, pureed
  8. 1 tablespoon confectioners’ sugar
  9. 1 teaspoon lemon juice

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and lightly flour a 9×13-inch baking pan.
  2. Blend cake mix plus extender, water, egg whites, and oil together in a bowl using an electric mixer until just moistened. Pour batter into the prepared pan.
  3. Bake in the preheated oven until a toothpick inserted into the center of the cake comes out clean, 32 to 26 minutes.
  4. Meanwhile, combine strawberry preserves and pureed strawberries in a medium bowl. Stir in confectioners’ sugar and lemon juice. Refrigerate until ready to use.
  5. Transfer cake to a cooling rack and let cool to room temperature, at least 25 minutes.
  6. Poke holes into the cake about 1 inch apart using the handle of a wooden spoon. Slowly spread the strawberry sauce over the cake, letting it fill the holes. Refrigerate until completely chilled.
  7. The directions for making the cake are based on the particular brand mentioned. Follow instructions on the box if using a different brand. Some cake mixes are 16.25 ounces, and some are 15.25, so add the appropriate amount of extender as needed to reach 18.25 ounces.

This was just what I was craving. I even had a small jar of preserves that was expiring and needed to be used. I debated on removing a star because of the cake mix extender. It isn’t necessary. Its a cake in a 9×13 pan. Not like you are making a 3 tier cake. And its only 3oz of extender. Then there are at least 3 types of extenders most of them have their own wet ingredients and the extender recipes usually make at least 1 cup. So if you are reading this rest assured you dont need the extender. NOTE: you will need to make the cake mix as written on the box ignoring the parts/ingredients of this recipe that pertain to making the cake mix. So make the cake mix from the box instructions, cool, poke holes and then follow the recipe for the strawberry topping.
