During the holidays, I made a strawberry cake with cream cheese frosting. It looked to be a hit with everyone!

Ingredients

  1. 1 ¾ cups white sugar
  2. 1 cup unsalted butter, softened
  3. 5 large egg whites
  4. 2 cups pureed strawberries
  5. ½ cup sour cream
  6. 2 teaspoons strawberry extract
  7. 3 cups cake flour
  8. 1 tablespoon baking powder
  9. 1 teaspoon baking soda
  10. ¼ teaspoon salt
  11. 1 (8 ounce) package cream cheese, softened
  12. ¼ cup unsalted butter, softened
  13. ¼ cup pureed strawberries
  14. ½ teaspoon strawberry extract
  15. 6 ½ cups confectioners’ sugar
  16. 1 cup sliced fresh strawberries

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Grease and flour three 9-inch cake pans.
  2. Beat sugar and butter together in a large bowl with an electric mixer on medium speed until fluffy. Add egg whites one at a time, beating well after each addition. Stir in pureed strawberries, sour cream, and strawberry extract.
  3. Sift cake flour, baking powder, baking soda, and salt together in a medium bowl. Add gradually to the butter mixture, beating until combined. Pour batter evenly into the prepared pans.
  4. Bake in the preheated oven until a toothpick inserted into the center of each layer comes out clean, 30 to 35 minutes. Let cool in the pans for 10 minutes before removing and cooling completely on wire racks, about 30 minutes more.
  5. While cakes cool, beat cream cheese and butter together in a large bowl with an electric mixer on medium speed until smooth. Add pureed strawberries and strawberry extract. Gradually beat in confectioners’ sugar until frosting is smooth.
  6. Frost and assemble the cooled cake layers. Decorate the top with sliced strawberries.

I made only half the recipe using 3 small egg whites and slicing the strawberries rather than using strawberry purée. I did not have any strawberry extract so I subbed Torani sugar free strawberry syrup. I served it with the cream cheese frosting on the side since some members of the family do not care for cream cheese. Even with all the substitutions that I made, the cake was delicious. Thanks for the recipe.
