Spiced Chocolate Chip Banana Cookie Bars

A banana cookie bar that is incredibly moist. In my home, these never last very long. Before cutting, dusted with powdered sugar. These are my favorite frozen treats. The bars should be sliced, then placed in snack bags and frozen. Then simply take a bag out and eat anytime you choose!

Ingredients

  1. 1 ½ cups white sugar
  2. 1 cup sour cream
  3. ¾ cup butter, melted
  4. 2 eggs
  5. 1 ½ cups mashed banana
  6. 2 teaspoons vanilla extract
  7. ½ teaspoon rum flavoring
  8. 2 ½ cups all-purpose flour
  9. 1 teaspoon salt
  10. 1 teaspoon baking soda
  11. 1 teaspoon ground cinnamon
  12. 1 teaspoon ground ginger
  13. ½ teaspoon ground nutmeg
  14. 1 cup chocolate chips

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Grease and flour a 9×13-inch baking pan.
  2. Mix sugar, sour cream, butter, and eggs in a large bowl using an electric mixer on low speed for 2 to 3 minutes. Scrape bowl and add bananas, vanilla extract, and rum flavoring; beat well.
  3. Combine flour, salt, baking soda, cinnamon, ginger, and nutmeg in a bowl; mix well. Stir flour mixture into banana mixture and beat on medium speed until well mixed, 1 to 2 minutes. Fold in chocolate chips. Spread batter into the prepared pan.
  4. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 20 to 25 minutes. Cool completely before cutting into bars.

This recipe was a big hit! I often make banana bread or banana cake with my overripe bananas, but I decided to give this one a try since I had sour cream I needed to use. The additional spices really sets this apart! I used only 1 cup of sugar and it was plenty sweet enough for my family.
