Crisp and delicate drop cookies with coconut, walnuts, and cereal made of crisp rice and wheat. If you enjoy raisins, increase the amount to 1 cup.

Ingredients

  1. 2 cups all-purpose flour
  2. 1 teaspoon baking powder
  3. ½ teaspoon baking soda
  4. ½ teaspoon salt
  5. 1 cup butter, softened
  6. 2 cups brown sugar
  7. 2 eggs
  8. 1 teaspoon vanilla extract
  9. 4 cups high protein crisp rice and wheat cereal
  10. 1 cup flaked coconut
  11. 1 cup chopped walnuts
  12. ½ cup raisins

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, baking powder, baking soda and salt; set aside.
  2. In a large bowl, cream together the butter and brown sugar until smooth. Beat in the eggs one at a time then stir in the vanilla. Blend in the sifted ingredients until just incorporated. Mix in the cereal, coconut, walnuts and raisins. Drop by tablespoonfuls onto ungreased cookie sheets. Cookies should be at least 2 inches apart.
  3. Bake for 9 to 12 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

I just made it and it tastes really good and crunchy. The only thing was it was hard to mix in the cereal, coconut and walnuts. I will only use three cups of rice cereal next time. Great recipe.

This is a great all-around cookie. It’s not too sweet but sweet enough for the little ones. It has a soft middle but a nice crunch from the Krispies. I had a few dried dates I wanted to use up so they got chopped up and thrown in there as well. Next time I may try throwing in some chocolate chips. This is a wonderful recipe and easily adjustable to suit your taste.

These were simple to make. I added 1 cup of finely chopped dates and omitted the nuts and they still turned out very, very good. I baked them in a 300*F convection oven for 9 minutes. Yummy!
