Ingredients

  1. 3 large sweet potatoes
  2. ½ cup butter, softened
  3. 1 tablespoon vanilla extract
  4. 2 cups sugar, or more to taste
  5. ½ teaspoon ground nutmeg
  6. 4 eggs, beaten
  7. ¾ cup evaporated milk
  8. 2 (9 inch) unbaked pie shells

Instructions

  1. Bring a large pot of water to a boil. Add sweet potatoes and cook until tender but still firm, about 30 minutes. Drain and cool; peel and mash.
  2. Preheat the oven to 350 degrees F (175 degrees C).
  3. Combine sweet potatoes, butter, sugar, vanilla, and nutmeg in a large bowl. Whisk eggs and milk together in a small bowl; blend into sweet potato mixture. Pour filling into pie shells.
  4. Bake pies in the preheated oven for 60 minutes, or until a knife inserted in the center comes out clean.

I used 3 small leftover baked sweet potatoes and a large can of drained sweet potatoes. I’m not crazy about nutmeg, so I only used a tiny bit. I added extra vanilla and cut the sugar to 1 cup.It took longer than an hour to cook. I had to turn the oven up to 400 degrees to get the pastry brown. The pie was very good. These are my first sweet potato pies!

Added some cinnamon in it too. I even added an extra tablespoon of vanilla. Also because this requires 2 cups of sugar I didn’t throw it all in at once I poured, stirred, poured some more, stirred some more, to gradually blend the sugar in better. Love the results came out amazing!

This recipe is so amazingly easy!!! The only change I made is like everyone else I added a little cinnamon to the mixture. But I also changed the sugar amount. I have a lot of diabetics in my family so I do one cup of sugar and half cup of brown sugar. It’s still super delicious!!!
