Without the frosting, this simple orange cake is still fantastic. Sometimes I just cover the top with icing sugar. Two 8-inch cake layers or a 9×5-inch loaf can be created using this recipe. Bake your cake for 60 minutes if it’s a loaf.

Ingredients

  1. 2 (3 ounce) packages cream cheese, softened
  2. ¾ cup confectioners’ sugar
  3. 1 (9 inch) prepared graham cracker crust
  4. ¼ cup chopped pecans
  5. ⅓ cup instant chocolate pudding mix
  6. ¼ cup instant vanilla pudding mix
  7. 2 cups cold milk
  8. ¾ teaspoon vanilla extract
  9. ½ cup heavy cream, whipped
  10. 30 pecan halves

Instructions

  1. Beat softened cream cheese and confectioners’ sugar together in a large bowl with an electric mixer until smooth. Spread mixture into the bottom of prepared graham cracker crust. Sprinkle chopped pecans over mixture.
  2. Stir chocolate and vanilla pudding mixes together in a separate large bowl; pour in milk and vanilla extract. Beat on low speed for 2 minutes; spoon into the pie pan.
  3. Cover the pie and refrigerate for at least 2 hours. Top with prepared whipped cream and pecan halves.

the recipe is easy to make , instead of mixing vanilla & chocolate pudding just use 1 . I found it to be a phenomenal dessert

This is a good pie, but I almost passed it by upon just reading the name! Not being from the south and having heard my husband tell horror stories about having to eat possum as a kid. I just had to open the recipe and see what it was! The only issue I had was with the pudding mixture. It was not nearly thickened enough after beating on low for 2 minutes. After beating another 2 minutes on medium speed, it somewhat thickened but even after chilling all day in the fridge, it still wasn’t as sturdy as I would like for it to be. It tastes good though and I thank you for sharing this recipe!

I made a regular pie crust because I don’t like graham cracker crust. I have tried this with graham cracker crust but I like the regular pie crust the best. I bake the crust and let it cool before I put the cream cheese and pecans into it.

I made these into miniature desserts to control the portion sizes. I think this is a quick dessert, but I’m thinking the vanilla pudding gets drowned out by the chocolate, so unless you’re going for a layered look (which isn’t instructed) it’s pointless to use two different puddings. I cheated and used Reddi whip, instead of making my own whipped cream.
