Even if you’re not a fan of dried fruit, you’ll have to admit that this Christmas pudding is unique and tasty. It is great without any additional sugar or spices. Serve with heavy cream, crème anglaise, or vanilla ice cream.

Ingredients

  1. 1 prepared 8 inch pastry shell, baked and cooled
  2. ½ cup butter, melted and cooled
  3. 1 ¼ cups white sugar
  4. 2 eggs, beaten
  5. 1 teaspoon vanilla extract
  6. 1 tablespoon distilled white vinegar

Instructions

  1. Preheat oven to 300 degrees F (150 degrees C).
  2. In a medium bowl combine butter, sugar, eggs, vanilla extract, and vinegar. Mix until smooth. Pour mixture into pastry shell.
  3. Bake in preheated oven for 10 minutes. Raise temperature to 325 degrees F (165 degrees C) and bake an additional 20 to 30 minutes, until center is set and top is golden brown.
