Soft Sugar Cookies With White Chocolate, Almonds, and Cranberries

Christmas cookies can be made using this recipe. In a straightforward soft sugar cookie dough, the white chocolate chips, chopped almonds, and dried cherry-flavored cranberries make the ideal mix. Just a “mouthful of Christmas” seems to be how it tastes.

Ingredients

  1. 1 cup shortening
  2. 1 cup butter, softened
  3. 2 ¼ cups white sugar
  4. 3 eggs
  5. 1 tablespoon vanilla extract
  6. 1 teaspoon almond extract
  7. 5 ¼ cups all-purpose flour
  8. 1 tablespoon baking powder
  9. 1 ½ teaspoons salt
  10. 1 cup slivered almonds, chopped
  11. 1 cup white chocolate chips
  12. 1 (6 ounce) package cherry-flavored sweetened dried cranberries (such as cherry-flavor Craisins®)

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Beat sugar, shortening, and butter together in a large bowl with an electric mixture until smooth. Beat eggs, vanilla extract, and almond extract into butter mixture.
  3. Whisk flour, baking powder, and salt together in a bowl. Gradually add flour mixture to butter mixture until dough just comes together. Stir almonds, white chocolate chips, and dried cranberries into the dough.
  4. Drop rounded tablespoons of dough about 2 inches apart on baking sheets. Bake cookies until bottom edges are light golden brown, 10 to 12 minutes. Cool cookies for 5 minutes before transferring to a wire rack to cool completely.

These are wonderful cookies! I make several batches over the holidays. I prefer dark chocolate chunks over the white chips, so that’s what I always use, however, I’ve improvised adding coconut or using walnuts instead of almonds, but at the end of the day, almonds are my fave. Give this a try, great cookie!

Dear Husband says “I don’t like white chocolate or cranberries, so you can have them.” I used dried cherries instead, omitted the almonds, substituted honey flavoring for the almond extract and he LOVED them! Me too! I’m usually not a fan of white chocolate either, but had too many bags left over from holiday baking, and this was an excellent way to use them!

Great cookies!! We love orange flavored craisins! Next time I make I am going to use orange craisins and also add 2 tablespoons of orange zest. I may even make an orange icing to drizzle over the top of cookies. Recipe is also great as written!!!

These are so simple but they are amazing! The recipe makes a lot but I used a small scoop and made about 8 dozen small cookies in no time at all. We omitted almonds because I forgot to grab some, and added some extra white choc chips for the kids. Perfect addition to my holiday baking list.

I don’t understand how these don’t have more reviews?? These are honestly some of the best cookies I have had. I don’t like white chocolate, I don’t like cranberries (at allll), but these really are so good. I never put the almonds in them because they are too hard for my son and I, but other than that, I do everything the same. My family always gets these around the holidays, but I have people asking for them all through the years. I’m a home baker and this is one recipe that I do not change, and it is the most requested.

Did the recipe as is for a holiday bake sale. Delicious! Only thing to keep in mind is that they don’t spread out much if at all while baking, so next time I make them I plan to flatten them a bit more.

Delicious! They have great flavor. I followed the recipe exactly except I increased the almond extract another half a teaspoon. My family all loved them! I also flattened them with a spatula straight out of the oven which gives them a great texture in the middle. They are a perfect Christmas cookie.
