Ingredients

  1. 1 ¾ cups skim milk
  2. 1 (3.5 ounce) package instant pumpkin pudding
  3. ½ cup pumpkin puree
  4. ½ teaspoon pumpkin pie spice

Instructions

  1. Stir skim milk and pudding together in a bowl until smooth, about 2 minutes. Add pumpkin and pumpkin pie spice and stir until well incorporated. Pour into 4 dishes and refrigerate until set.
  2. If pumpkin pudding is not available, substitute with butterscotch or vanilla pudding.

I had a box of pumpkin pudding that I had been saving for a special day. Today was that day. Followed the recipe and it is delicious. I topped mine with pumpkin seeds and pumpkin pie spice.
