Simple Strawberry Sherbet

We simply chose to experiment with making sherbet one evening. It turned out to be quite tasty!

Ingredients

  1. ¾ cup white sugar
  2. ¼ cup milk (Optional)
  3. ¼ cup lime juice
  4. 2 quarts fresh strawberries, mashed
  5. 1 egg white

Instructions

  1. Mix sugar, milk, and lime juice together in a bowl. Mix in mashed strawberries.
  2. Beat egg white in a glass, metal, or ceramic bowl until stiff peaks form. Fold into the strawberry-lime mixture. Pour mixture into a freezer-safe container. Cover with plastic wrap.
  3. Freeze until almost firm, about 2 hours. Remove from freezer and stir thoroughly to break up chunks. Return to the freezer for 3 hours, stirring once every hour. Freeze until firm, 8 hours to overnight.
  4. If you don’t have the milk, don’t add it. We didn’t add any milk and it came out fine, although the milk makes it way creamier.

Made as written except I used half and half instead of milk because that is what I had on hand. Mine was frozen solid after 3 hours. I loved the addition of lime juice in this. This is a good way to use up overripe strawberries.
