Ingredients
- 2 eggs, separated
- ½ cup white sugar
- 4 cups 2% milk
- 1 cup flaked coconut
- 2 cups crushed saltine crackers
- 1 teaspoon vanilla extract
Instructions
- Beat egg yolks and sugar together in a bowl with an electric mixer until fluffy and pale yellow, 1 to 3 minutes. Heat milk in a large saucepan over medium heat and whisk in egg yolk mixture until smooth; boil for 1 minute. Mix in coconut and cracker crumbs; bring to boil, reduce heat to low, and simmer mixture until thick, about 5 minutes.
- Beat egg whites in a glass or metal mixing bowl with an electric mixer until they hold stiff peaks; gently fold into coconut mixture and mix in vanilla extract. Serve warm or cold. Refrigerate leftovers.

Is very good!! But should the meringue go on the top right away or after it’s cooled off and should it go in the oven so the meringue can brown lightly
First had this in Lancaster, PA. Fell in love but this is my first try at making it myself. Love it. Easy, and delicious. Also a good way to use up stale crackers.
I was intrigued by the saltine crackers. I followed directions but mine came out a bit thick. I think final cooking time probably needs to be reduced to about 3 minutes. I’m not sure how much the egg whites add to this recipe but this was a pain to me. Next time I will simplify and just use the whole egg in the first step. Also make sure to crush your saltines finely. I had chunks of saltine in my pudding and it just tasted odd.
Very good recipe! I followed it exactly as written. To give an idea of how much 6 servings makes, I poured the pudding in a 7×11 baking dish and it filled it up with less than inch to the top of the dish.
I love this recipe. It’s about the same recipe I used years ago. that I lost. It’s a keeper! Thank you for sharing.

Heavens, this was a surprise! I looked around for a quick dessert and what I had on hand. Milk, crackers, eggs and coconut….who knew? Great texture, and I topped it with fruit to make it look prettier!
Such an easy, rewarding recipe! The ingredients are all at hand, and the pudding was ready to serve in under 20 minutes. I’m so glad I tried this. I also tried adding more crushed crackers. Good either way.
