Ruby Chocolate Rocky Road

Rocky road is essentially made up of heaps of rocky treats that are covered and adhered together with chocolate that won’t break when you bite into it (thanks to the coconut oil). Don’t feel constrained by the fact that I utilized some upscale components here. Just use what you already have that you believe will go nicely together from your cabinet!

Ingredients

  1. 14 ounces ruby chocolate, chopped
  2. ½ cup coconut oil
  3. 1 teaspoon vanilla extract
  4. 18 shortbread cookies (such as Walkers®), coarsely chopped
  5. ½ (10 ounce) package marshmallows, cut into cubes
  6. ½ cup shelled pistachio nuts
  7. ½ cup slivered almonds
  8. 1 ½ ounces candied flowers
  9. 3 tablespoons freeze-dried raspberries
  10. 3 tablespoons coconut flakes

Instructions

  1. Grease a small baking sheet and line it with waxed paper.
  2. Place ruby chocolate, coconut oil, and vanilla extract in a large microwave-safe bowl. Microwave on full power until melted, about 1 1/2 minutes. Remove and stir vigorously with a silicone spatula. Press any remaining solid pieces of chocolate into the hot liquid until melted.
  3. Add shortbread cookies, marshmallows, pistachios, almonds, candied flowers, raspberries, and coconut flakes to the chocolate mixture. Stir gently until fully coated.
  4. Spread mixture on the prepared baking sheet and refrigerate until firm, 1 to 2 hours. Cut into squares using a really sharp knife.
  5. The reason I use the microwave with ruby chocolate is that it is easier to control the melting point. The color can go quickly if ruby chocolate is overheated. I also use plastic and silicone spatulas to work with all chocolate, as it doesn’t keep the heat in the bowl itself, which also gives you more control.
  6. Full power on my microwave is 900 watts.
