This delicious appetizer made from easy-to-prepare eggplant can be made a little in advance. Pasta and roasted pork tenderloin go well particularly well. What more can I want for? It was well-received by my girlfriend.

Ingredients

  1. 1 cup shortening
  2. 1 cup packed brown sugar
  3. ½ cup white sugar
  4. 2 eggs
  5. 1 ½ teaspoons vanilla extract
  6. 2 ½ cups all-purpose flour
  7. 1 teaspoon baking soda
  8. 1 teaspoon salt
  9. 1 ½ cups candy-coated milk chocolate pieces (such as M&M’s®)

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Beat shortening, brown sugar, white sugar, eggs, and vanilla in a mixing bowl until light and fluffy, 2 to 3 minutes.

  4. Add flour, baking soda, and salt; blend well. Stir in 1/2 of the chocolate candies.

  6. Drop dough by teaspoonfuls onto an ungreased baking sheet. Use remaining candies to decorate dough balls; press down slightly.

  8. Bake in batches in the preheated oven until lightly browned with soft centers, 9 to 11 minutes.

I’ve been making this recipe for years for my boyfriend’s birthday. I put vanilla ice cream between 2 cookies to make a sandwich then freeze them. Soooo much better than store bought cookie-wiches. They are also fantastic without ice cream. I make them with 1/2 cup unsalted butter and 1/2 cup shortening. I chill the dough for a bit so they don’t spread too much. I LOVE these cookies and so does my boyfriend!

An excellent recipe. I’ve made it several times. This last time I made one change that put this recipe over the top(as if it weren’t already). I added 2 teaspoons of cream of tarter. That addition makes the cookies more soft and chewy. Either way, this recipe is first class. Kudos to Robbi for sharing the recipe!!
