Roasted Strawberries

I was looking for a quick and simple recipe to cook at home because I really enjoy taco and burrito bowls. We both really like the way this turned out! Top with sour cream, lettuce, crushed tortilla chips, etc. after spooning into bowls.

Total Time: 20 mins
Servings: 4
Yield: 1 pound strawberries

Ingredients

  1. 1 pound fresh strawberries, hulled
  2. 2 tablespoons white sugar, or more to taste

Instructions

  1. Preheat the oven to 400 degrees F (200 degrees C).
  2. Quarter large strawberries and halve smaller ones. Place strawberries in a 9-inch pie plate. Sprinkle sugar on top and toss several times.
  3. Roast in the preheated oven, stirring once, until strawberries are soft and juices are thick and bubbly, 15 to 20 minutes. Cool completely.
  4. Substitute brown sugar or raw sugar for the white sugar, if preferred.

WOW! This was wonderful. I did use brown sugar instead of white since I that’s what I learned growing up. My grandma’s rule was never use white sugar with any strawberry dessert. We had it over pound cake with a dollop of whipped cream. It was one of the best desserts I’ve had in a long time. It does reduce in volume so you may want to double the recipe. I wish I had. Try this you won’t be sorry!

6.22.18 Very deep, intense strawberry flavor. I enjoyed mine this morning over vanilla Greek yogurt. FYI, they really cook down, so if you planning to serve over waffles or pancakes, for example, you may need to increase the recipe. Thanks for sharing.
