Rich and Gooey Hot Chocolate Mousse Cake

To prepare a wonderful after-school appetizer or snack, just a few simple ingredients are needed.

Ingredients

  1. 1 ¾ cups dark chocolate, chopped
  2. 1 ⅓ cups white sugar
  3. ¾ cup butter
  4. 1 pinch salt
  5. 5 eggs, beaten

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch baking dish.
  2. Combine dark chocolate, sugar, butter, and salt in top of a double boiler over simmering water; heat, stirring frequently and scraping down the sides with a rubber spatula, until melted and smooth, about 5 minutes. Remove from heat and mix in eggs until well blended. Pour batter into the prepared baking dish.
  3. Bake in the preheated oven until edges pull away from the sides of the baking dish, about 35 minutes.
  4. Add ground almonds to the batter if desired.

This was like eating rich, creamy fudge! It was not gooey, but WAS deep, dark, chocolate deliciousness. I used 3/4 cup coconut sugar with 1 cup white, and then one 4 oz. Unsweetened baking bar (chopped) with 3/4 cup dark chocolate chips. I placed a glass bowl over my saucepan of simmering water to melt all the ingredients, which worked great; then baked 33 minutes. Oh, and I also tempered the beaten eggs with a spoonful at a time of the hot chocolate mixture. Excellent flavor! Thanks for the recipe!
