Rhubarb Almond Bars

At a school campout years ago, I discovered this excellent vegetable meal. It is simple to make and may be prepared similarly in the oven.

Ingredients

  1. ¾ cup all-purpose flour
  2. ⅓ cup cold butter
  3. ¼ cup white sugar
  4. 1 ¼ cups finely chopped fresh rhubarb
  5. 1 egg
  6. ¼ cup white sugar
  7. ¼ cup almond meal

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Process flour, butter, and 1/4 cup sugar together in a food processor until crumbly; press mixture into bottom of 9×9-inch baking pan.
  3. Bake in preheated oven until golden brown, about 15 minutes.
  4. Stir rhubarb, egg, 1/4 cup sugar, and almond meal together in a bowl until combined; spread mixture over crust.
  5. Bake in preheated oven until bubbling, about 30 minutes.
  6. Cool to room temperature on a wire rack before cutting into bars.
  7. For the crust, if you don’t have a food processor you can easily cut the cold butter into the flour and sugar with a knife or pastry blender until the mixture resembles coarse crumbs.
