Really Quick Peach Cobbler

Ingredients

  1. ¾ cup white sugar
  2. 2 tablespoons all-purpose flour
  3. ¼ teaspoon ground nutmeg
  4. ¼ teaspoon ground cinnamon
  5. 1 (22 ounce) can cling peaches in heavy syrup
  6. ¼ cup butter, cut into chunks, divided
  7. 1 (15 ounce) package pastry for a double crust 9-inch pie, cut into 1-inch strips

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix sugar, flour, nutmeg, and cinnamon together in a bowl.
  3. Pour peaches into the bottom of a glass 9×13-inch baking dish. Sprinkle sugar mixture over peaches and mix well. Scatter 1/2 of the butter chunks over the peach mixture. Arrange pastry strips over peach mixture in a crisscross or striped pattern. Scatter remaining butter chunks over pie pastry.
  4. Bake in the preheated oven until crust is golden brown and crisp, 30 to 40 minutes.

I will definitely make this again… I added a few blackberries at my son-in-laws request and it came out scrumptious.. It disappeared after dinner even though everyone said they were full from the meal..

To be perfectly honest I didn’t think this would turn out but was I ever pleasantly surprised! It was delicious. I have never made cobblers with pie dough but this is going to be the beginning of many more. I didn’t add any sugar at all, the juice from the peaches was plenty sweet enough. I used two 24 ounce jars of canned peaches. One jar was not enough to spread over a 13×9 inch pan. I rolled the dough into a sheet and placed over the top of the peaches. While it baked the juices bubbled up and over parts of the crust and made a wonderful baked on gooey goodness. This was really good, I will make this again and again. Great recipe. I have a picture but it won’t upload because it isn’t big enough 🙁
