This pasta salad with bacon ranch has a lot of flavor. A great flavor is definitely added by the crisp fried bacon. Every party and barbecue where I serve this popular side dish, I get requests.

Ingredients

  1. 1 egg white
  2. 1 teaspoon white sugar
  3. 1 teaspoon ground cinnamon
  4. 2 teaspoons raisins
  5. 1 teaspoon crushed toffee candy
  6. 4 large Red Delicious apples, cored

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Place the cored apples upright in a shallow baking dish.
  2. In a medium bowl, whip the egg white until it holds a stiff peak. Sprinkle in the sugar, and whip just a bit more. Stir in the cinnamon, raisins, and toffee until evenly distributed. Spoon into the cores of the apples.
  3. Bake uncovered for 5 to 10 minutes in the preheated oven, until the meringue is crisped. Allow to cool slightly before serving.

Egg whites are too fluffy in this baked apple recipe. There was no extra liquid that the apples could sit in and even after baking for 15 minutes (longer than required) the apples were not tender. Will not make this again.

It was difficult to stuff the apples after only having cored them, so I used my apple slicer/corer which simplified things. I was sure not to press it completely through so as not to have individual slices of apples, but rather a ‘flower’. I stuffed them and them and pressed them shut. I kept them in a little longer just to make sure the egg was cooked (I have a thing with raw eggs). The mixture was not very tasty. Could’ve used a full tbsp of sugar (at least), and I’m not even a fan of sweet things!
