Ingredients

  1. ½ cup butter, softened
  2. ½ cup white sugar
  3. ½ cup packed brown sugar
  4. 1 egg
  5. 1 teaspoon almond extract
  6. 2 cups all-purpose flour
  7. 1 teaspoon baking soda
  8. ¼ teaspoon salt
  9. ¼ cup white sugar for decoration
  10. 40 milk chocolate candy kisses, unwrapped
  11. 1 cup confectioners’ sugar
  12. 1 tablespoon milk
  13. 4 teaspoons raspberry jam
  14. ¼ teaspoon almond extract

Instructions

  1. In a medium bowl, cream together the butter, 1/2 cup white sugar and brown sugar until smooth. blend in the egg and 1 teaspoon almond extract. Combine the flour, baking soda and salt; stir into the creamed mixture. Cover dough and refrigerate for at least one hour, or until easy to handle.
  2. Preheat the oven to 325 degrees F (165 degrees C). Roll dough into 1 inch balls, roll the balls in the remaining white sugar and place them 2 inches apart onto ungreased cookie sheets.
  3. Bake for 10 to 12 minutes in the preheated oven, or until golden brown. While hot from the oven, immediately press a chocolate kiss into the center of each one. Remove from cookie sheets to cool on wire racks.
  4. In a small bowl, mix together the confectioners’ sugar, milk, raspberry jam and 1/4 teaspoon almond extract until smooth. Drizzle over cooled cookies.

Never made thumbprint cookies before, but I wanted to find a cookie to set in the cherry jelly hearts I picked up for Valentine’s Day. I looked at LOTS of recipes. This was the only one I saw with brown sugar, so I was intrigued by that. I tried the suggestion of adding the extra egg yolk, and it worked very well. I had to use strawberry jam, and I added 2 drops pink food coloring for Valentine’s Day. I tried some with a thumbprint first, and I definitely found that waiting until they have cooked at least 9 minutes was the best time to place the piece of Candy. If you press them down first, the cookie slides away from the candy, and the cookie goes flat. I pulled them out of the oven at 9-10 minutes placed the candy, then returned it for 1-2 minutes more. I didn’t have the chocolate kisses, so I would probably just place those right as they come out of the oven like the recipe says. In all, I was very happy with the result.

This was not a good recipe. The dough was way too dry and hard to work with. It needed more moisture. I put in a lot extra raspberry jam for the drizzle and it still just tasted sugary. I would recommend not wasting your time making these. Sorry.

Use a Ziploc bag as a piping bag to drizzle the topping on the cookies at the end. It comes out perfect every time. I replaced the kisses with truffles. Don’t push them down too much; just enough for them to stick to the dough. I’ve made these cookies 3 times now and it’s always a hit 🙂

I liked the flavor of these but they were too sweet for me. I would cut back to 1/3 of a cup of each sugar next time. the shape of mine turned out a bit flatter than the picture shows also

After reading a few reviews I made these cookies with dark chocolate kisses instead of the recommended milk chocolate kisses and I liked the combination of flavors. I’m someone who typically loves to eat tons and tons of cookies, but these cookies were so sweet that after one cookie I knew I had to stop. For the first dozen cookies I forgot to add almond extract to the drizzle, and I ended up liking that batch better. If I make them again I’ll probably tinker with the combination/recipe a bit. I’m curious if almond flour would work within this recipe.

4.5 stars for the variation I made on this recipe to make an Autumn cookie using this as a base. Instead of almond ext., I used vanilla ext., and used a pumpkin spice kiss in the center. I added a shake of cinnamon and nutmeg to the batter to go along with the theme. I added 2 T. of milk to the batter to avoid the dry, crumbly cookie that many reviewers complained about…no dry cookies here! Thank you for the base recipe to fuel my creativity. This recipe made 36 very good cookies.

This recipe was an awesome one! I wanted something different and this provided. I don’t actually like peanut butter cookies so this concept was great. Just a few critiques though. First the dough was so dry I couldn’t get it stick. So I had to add about a tablespoon of water to the dough. It was still very dry but after that I was able to get it to stick decently. I would start with adding a teaspoon of and move your way up. An oil would probably work better but I didn’t have any in arms reach. I also didn’t have raspberry jam, but I had a berry blend. Turned out great, I think any tart berry jam would work we.. Finally I took other’s advice and used dark chocolate kisses because I just really like dark chocolate. Huge hit. You only need one small bag. I apparently made my cookies small and it made about 65 cookies, so you get a lot out of this recipe.

This is a light, delicious little cookie! I often serve ice cream with a cookie standing in the middle, and this was a hit. I subbed strawberry jam for raspberry; otherwise, followed the recipe. I did have to add a little more milk to the drizzle, but that’s not unusual. They are just as good without the Kiss.
